Lentil Soup

Last night I was feeling the blues (missing my husband) and felt like eating again after having a full dinner (thanks Barefoot Contessa for making me hungry). I remembered there was some leftover of the lentil soup I made so I got up, took out the soup from the ref, heated it and got some crackers to go with it.

Gash, I devoured that friggin soup. Yep, I am a soup lover, and a hearty soup is my second comfort food of choice, first one is of course sushi.

Here’s the “recipe” I concocted for this little soup of mine. This of course is influenced by what I have watched in Lifestyle Network’s food shows, as well as my frequent orders of lentil soup in Café Med. Doesn’t taste like the real thing (I have limited spices, you know!) but it’s close to the authentic flavor.

Lentil/Vegetable Soup

Ingredients:
Olive oil
Chopped garlic (I love lots of garlic!)
One chopped onion (not really my thing, but just add it anyway)
4 cups water
2 Tbsp tomato paste
1 can of lentils
Cubed potatoes
Cubed carrots
Chopped celery
Cumin
Chili Powder
Cayenne Pepper
Ground black pepper
Bay leaf

Saute garlic and chopped onion. Add water and bring to a boil. Add potatoes, carrots, and celery. Check if the potatoes are soft, then add the lentils. Add the tomato paste, the 3 spices (depends on your taste but I like them spicy hehehe), ground pepper, and bay leaf. Simmer for 15 minutes. Serve with crackers. Crostini preferably, but sky flakes will do. Hahaha.
